Aubergine Rolls (Involtini di Melanzane)

While learning to cook Italian food in Palermo, Sicily, we realised just how yummy, easy, and inexpensive these are to make. They are also an easy thing to cook in the Omnia Oven while traveling in a Motorhome.

 1 Aubergine (large)
 4 tbsp Extra Virgin Olive Oil
 1 cup Breadcrumbs
 Salt & Pepper to taste
 Dried oregano to taste
 100 g Prosciutto, (substitute for ham or bacon)
 ½ cup Caciocavallo (or substitute for Provolone) Cheese or Tasty Cheese
 100 g Passata
 Extra Cheese to sprinkle on top

Trim the tops from the aubergines, then cut lengthways into 7mm-thick slices. You don't want them too thin because they will break on rolling.


Whisk together some extra virgin olive oil, salt, pepper and oregano, then brush this over the slices.


Heat the grill (frying) pan until hot then cook the aubergine slices until golden on one side, then the other. Don't overcrowd the pan. Set aside until cool enough to handle.

To Make the filling

Add prosciutto and cacciocavallo cheese, breadcrumbs, a pinch of oregano, some salt and pepper and a little olive oil. It should be moist, but not wet, so adjust as necessary and taste for seasoning.


Pile a little filling at the bottom of each slice, then roll them up into little parcels.


Add passata at the bottom of the Omnia, sprinkle oregano and salt and pepper on top.


Add rolls on top then sprinkle with grated cheese.


Cook the aubergine rolls in the Omnia on low gas on your stove top (or electric stove top) for 15-20 minutes.


This dish can be served hot or cold.
