We learned how to make these at Cookistan Cooking Class in Istanbul, Turkey. They are crunchy on the outside with tasty spicy meat filling, covered with yoghurt, butter, and mint. Don’t worry if you can’t find the Turkish dough, just use filo pastry instead.

Yields1 Serving

 1 Dough Sheet
 150 g minced beef
 2 onions
 2 garlic cloves
  cup milk
 1 egg
 250 g plain unsweetened Greek yoghurt
 Salt and Pepper to taste
 Chilli flates
  cup olive oil

Cut the pastry into a triangle shape

Knead the meat with grated onions, pepper and salt

Mix 1/3 cup olive oil with milk and wet the sheets (this makes the inside soft while the outside is crispy)

Put the meat mixture at the outer edge of the dough sheet and roll it into a snake shape

Then roll the snake into a snail

Place on baking sheet and brush with egg yolk

Bake at 200 degrees C for 35-40 mins. If you don’t have an oven you can shallow fry in sunflower oil, but watch for burning, and turn often. Takes about 10 minutes. Baking gives a crisper, crunchier finish

Mix the yoghurt with crushed garlic and place on top of Borecik

Melt the butter with red pepper flakes and put on top of Borecik. Sprinkle with dried crushed mint leaves
