Bulgur Salad

If you are looking for a salad with a difference then look no further. This is simple to make and absolutely divine, you won't be able to stop eating it. It really doesn't get any easier than this.

 1 cup Bulgur
 1 tbsp Tomato paste
 1 Spring onion
 1 Parsley
 1 Tomato finely chopped
 1 Cucumber cut into cubes (optional)
 1 Bunch Mint
 2 tbsp Pomegranate Molasses (or lemon juice)
 2 tsp Dried Mint
 1 tsp Cumin
 Salt and Pepper

Cover the bulgur with boiling water and cover, let sit for 20 minutes

Chop all vegetables

When bulgur is ready, add all vegetables, tomato paste, spices and pomegranate molasses.

Stir gently and serve.
