We tried these in Morocco, hot straight from the oil and gosh they were delicious. They are so easy to make that this recipe is sure to be a family favourite.

 450 g potatoes
 1 egg, beaten
 2 tbsp breadcrumbs
 ¼ tsp garlic powder
 ¼ tsp onion powder
 1 ½ tbsp finely chopped parsley
 ¼ tsp turmeric
 ¼ tsp cumin
 flour for coating
 salt and pepper to taste
 oil for frying

Bring a large pot of salted water to a boil and cook the potatoes at least 30 minutes or until tender.

Mash the potatoes and add the breadcrumbs, garlic, onion, cumin, turmeric, parsley, beaten eggs, salt and pepper. Stir to incorporate all the ingredients. If the mixture is too firm, add some breadcrumbs.

Shape into patties or roll into balls.

In a large saucepan, heat enough oil for deep frying to 350 F

Drench Maaqouda in flour to cover both sides. Do this step just before cooking otherwise the flour gets soaked into the mixture. Remove excess flour and deep fry them until the colour is to your liking. Keep an eye that they don't get too dark.

Drain on paper towels and serve with freshly squeezed lemon.
